Trying to replace the leather with this Nismo leather. Before I break any more plastic, I would like to know if there’s any procedures on removing the old leather as it seems the metal bracket here doesn’t just pop out

Those metal brackets do in fact, just pop out. They are in two pieces and are fastened at the corners by screws. Once the screws are removed, the brackets should pull away from the old leather. It's probably stuck on though so i would gently pry around the edges to get it to break loose. With the shifter boot on my SS, those brackets were rusty as hell and i had to peel off the old boot fabric in chunks.
